Nothing says “I love you Mum” quite like being brought breakfast in bed – being told to rest up and rise in your own time whilst your other half and the kids put the washing machine on, unload the dishwasher and make you a pot of tea!
This Mother’s Day, to help you wangle such a treat, I’ve put together an easy to make blueberry pancake recipe that the kids can make (with a little help from Dad!) Just print off this blog post and leave it in a prominent place to let your family know what you may enjoy on March 6th!
Here’s how to make these blueberry creamy cheese pancakes which are super tasty and can be eaten for breakfast but also as a lunch or anytime snack. It’s fortunate that this recipe makes so many pancakes (you’ll probably get about 12 pancakes out of this mixture, depending on how thick you make them) as they are definitely addictive! Here goes:
Ingredients:
- 1 tube of Primula Original Cheese
- 2 eggs
- 250g self raising flour
- 60g sugar
- 1/2 teaspoon salt
- 300ml milk
- 2 tablespoons margarine, melted
- 1 1/2 teaspoons vanilla extract
- 150g blueberries, halved
Method:
This delicious breakfast idea makes a nice change from toast and cereal and the blueberries count towards your five-a-day!

We make buckwheat pancakes because they’re gluten free but I bet this could be adapted. And actually I taught hubby how to make them last week so maybe I should print this and leave it as a hint like you suggest?!

I’m not sure I’d get them for Mothers Day breakfast but I have just brought some blueberries with thoughts of making a blueberry cheesecake, I think these sound rather tempting to make instead.
