Here’s a slimming recipe for a butternut squash soup. I enjoy making this from time to time. I tend to only buy in butternut squash every now and then as it is so tough to cut but it is always worth it as this soup is really tasty.

Here is an ingredient list:

  • Butternut squash
  • 1 red onion
  • 1 carrot
  • low cal cooking spray
  • Vegetable stock 600ml
  • Seasoning to taste

butternut squash soup

  • Spray saucepan with fry-light or other low cal cooking spray and pre-heat
  • Cut the butternut squash into chunks, taking the skin off first. De-seed and put chunks into a saucepan
  • Peel and chop the carrot, putting the chunks into a saucepan
  • Sweat the vegetables for about 10 minutes until softened, stirring often
  • Add the vegetable stock and seasoning then bring the pan to the boil
  • Once boiling, turn down the heat and simmer for 10 minutes
  • Remove from heat and use a hand blender to whizz up the ingredients
  • Serve immediately

This recipe is Slimming World friendly and makes a nice midweek lunch! Have you ever made your own soup? Have you tried this recipe before? Let me know in the comments!

  • I love soup for lunch and it’s been so cold recently it makes such a good warmer. This looks delicious – sometimes my local supermarket has the chunks reduced which makes things a lot easier!

  • I make a similar soup with butternut squash and sweet potato and it is the most comforting soup in the world. I recently made it using frozen butternut squash chunks which came from Tesco and it was just as delicious and easier to prepare too.
