I’ll be making this delicious home-made carrot soup this week. It is a healthy and slimming recipe and works well on my Slimming World plan. Here’s how you do it:
Ingredients:
3 large carrots
1 red onion
1 vegetable stock cube
Fry Light or other low cal cooking spray
Crushed black pepper
Method:
Peel the carrots and cut into small chunks
Chop the onion into slices
Prepare the stock by dissolving the stock cube in 1 pint of boiling water
In a medium sized pan, spray the vegetables with Fry Light and season with black pepper
Sweat the vegetables for a few minutes then add the stock and bring to the boil. Once boiling, turn the heat to medium and simmer for 15 minutes.
Remove from the heat and using a hand blender, blend the soup until smooth
Pour into a bowl and enjoy a tasty soup for lunch or as an ‘anytime’ snack!

I adore soup but am always put off making my own because it feels like a difficult thing to do – it’s always good to have reminders like this about how it is actually quite straightforward and so much nicer to have homemade. x
I have friends with soup makers and I was tempted but I didn’t want another appliance on my work surface and you can make it in a pan just as easily! x
