Regular readers will know I am following the Slimming World plan, so as we are in January, the month of new beginnings and good intentions, I wanted to share with you a new recipe that I have discovered for a nacho style feast, which is slimming but tastes as though it shouldn’t be!
I’m working with Primula and they have briefed me to think about light bites and a little bit of calorie reduction, so I thought this dish would be perfect to share! It uses Primula Light in the recipe (which counts half a tube as your Healthy Extra A Choice if you are also following Slimming World). Because you grill the cheese at the end, the dish has melted cheese oozing through it so it really feels like something naughty!
Here’s the skinny!
Serves 2
Ready in about an hour
Syns per serving: ½ if you are using the Primula Light as your Healthy Extra. If you aren’t then count an extra 6 Syn.
Ingredients:
2 baking potatoes, cut into wedges
Low calorie cooking spray
150g lean beef mince (ensure it is 5% fat or less)
1 onion, sliced
1 red pepper, deseeded and finely chopped
230g can of chopped tomatoes
1 tsp cumin
2 tsp fajita seasoning
1 tsp paprika
2 tomatoes, roughly chopped
150g tube Primula Light Cheese (available at larger ASDA stores)
Fresh green Jalapeño chillies, finely chopped (optional)
Salt & pepper to season

Method:
Preheat your oven to 200°C / 180°C fan / Gas 6
Put the wedges on a non stick baking tray, spray with the cooking spray and season
Bake for 25 minutes then turn, spray again and bake on other side for 25 minutes until golden
Meanwhile, spray a frying pan with cooking spray and place on a medium-high heat
Add the mince and brown for 10 minutes then add the onion and cook for a further 5 minutes or until softened
Add the pepper and cook for 2-3 minutes then stir in the tinned tomatoes
Sprinkle in the cumin, fajita seasoning, paprika and add some freshly ground black pepper
Cook for 10-15 minutes until most of the liquid has evaporated
Stir in the fresh tomatoes and remove from the heat
Preheat your grill to high
Put the cooked wedges into an ovenproof dish, spoon over the mince and squeeze over the Primula Light Cheese
Sprinkle with the chillies if using, and grill for 8-10 minutes or until the cheese starts to brown
Serve with lots of Speed Free Foods if you are on Slimming World

I guess you could substitute the mine with Quorn mince to get a similar effect? That would still be ok on Slimming World too if you follow that plan!
