Creamy rice pudding is comfort food at its best and I love comfort food! However as I follow the Slimming World plan I needed to find a way to be able to enjoy my favourite comfort foods in a diet friendly way, so there is a tried and tested recipe for a lovely creamy rice pudding… and it is only 2 Syns!
I use the milk as part of my daily milk allowance, and I Syn the chocolate sachet. The rice, water and sweetener are free foods on the Slimming World plan. As we are coming up to the winter months when it is cold outside, this makes a lovely hearty dish for when I need something to tide me over until dinner, or I have this as a warming supper later in the evening.

Looking so good Nadine, you and the pud! My favourite tip is putting cinnamon on things like porridge and yogurt, it’s amazing how sweet it tastes, and banana, egg and oat pancakes rock!
Mmmm – cinnamon is one of my faves too – that and nutmeg!

Oh my goodness look at you Nadine!! You look amazing! I’m going to have to follow all your tips as I need help. It is good to have comfort food that isn’t too naughty to fall back on. My favourite healthy warming phd is a baked apple – just an apple cored with raisins in the middle and bung it in the oven for an hour. I probably should hold the custard!
I love comfort food too – I’m a massive pudding fan, so I’m always looking for ways to have the treats I want for less calories!!

On the video you say fill up to the pint but on the ingredients above it says 400mls of water…. which one is right??
Thanks for asking Gail. Actually both are right! Let me explain. If you choose to use the milk from your milk allowance (100ml) then you top the boiling water up to the pint mark in your measuring jug then the amount of water you are adding is 400ml as the 100ml of milk that you already have in the measuring jug will help get the total amount of liquid to the pint mark.

This is so lovely thank you. I made the cream soda version and just couldn’t eat it.
Try a meringue nest,0% Greek yogurt and sliced strawberries, raspberries or blueberries,it’s lovely and low fat too.
