Slimming World Spaghetti Carbonara: Sometimes when you get in from a day at work you just want something quick and easy for dinner! Spaghetti Carbonara using a Slimming World recipe is perfect- it takes about 15 – 20 minutes to do and is really easy.

I like this as a ‘failsafe’ recipe because it uses items you might already have in your fridge and storecupboard; bacon, eggs, parmesan, garlic and spaghetti. None of this spoils quickly like some ingredients- you can keep most of this in your fridge or cupboard for weeks so it is great as a ‘back-up’ recipe!

400g spaghetti
Fry-Light
100g back bacon, all visible fat removed, cut into 2cm pieces
4 garlic cloves, crushed
4 large eggs, lightly beaten
120g parmesan cheese, finely grated
salt & freshly ground black pepper
Method:
Boil a pan of water for your spaghetti. Once it is boiling, add the dried spaghetti and time 10 minutes
Pre-heat a frying pan on the hob. Spray some Fry-Light or other low calorie cooking spray.
Add the bacon, cook until browned – then add the crushed garlic and stir fry for 30 seconds
Then, when the spaghetti is ready – drain in a colander and add the spaghetti to the frying pan
Add half the parmesan to the pan and stir
Then add the egg mixture and stir through as you turn the hob off. The heat from the spaghetti will cook the eggs. Then divide into 4 bowls
Add a sprinkling of parmesan to each bowl and serve
If you are following Slimming World, this meal is Syn free on Extra Easy if you count the parmesan as a Healthy Extra. Otherwise count 6 Syn.

Love carbonara! Since I’m gluten-free I’ve struggled to find decent GF spaghetti, but I bet it would work well with courgetti (my favourite!) and that would make it even less fattening too 🙂

We love carbonara, but I have never made it with beaten eggs including the whites. I will have to try this next time when I haven’t the time to separate the eggs. It looks delicious.

Carbonara has always been one of my mid week staples. Something all the kids enjoy and easy and nutritious to make. I usually use a little milk and Greek yogurt and have the egg quantity but the same basic idea.
