Slimming World BBQ Pulled Pork

Last weekend I was out all day on Saturday and was attending a function where a full buffet was involved. I didn’t want to ruin my dieting efforts, so I decided to put the slow cooker on so that I’d have a meal to come home to. Slimming World BBQ pulled pork.

I managed to steer clear of all the high calorie buffet food because I knew I had a great meal waiting for me – slow cooked BBQ pulled pork. I had it in a wholemeal bap with some sweet potato wedges and all this was Syn free on Slimming World!

Slimming World BBQ Pulled Pork

Here’s how I made it.
Ingredients:
2kg pork shoulder, all fat removed
5 tbsp Worcestershire sauce
1 tsp mustard powder
500g passata
3 tbsp balsamic vinegar
2 cloves garlic – crushed
3 tbsp sweetener
salt & freshly ground black pepper

Method:
In a small pan, mix passata, Worcestershire sauce, balsamic vinegar, mustard powder, garlic, sweetener and seasoning. Bring to the boil then simmer for 15 minutes or until sauce thickens.
Sear all sides of the pork in a hot frying pan then transfer into the slow cooker pot and coat with the sauce.
Cook for 5-6 hours on HIGH.
Remove pork from the slow cooker and place on a chopping board. Allow the meat to cool for approx 15 minutes then shred into bite sized pieces using two forks.

For the sweet potato wedges, peel the sweet potatoes and cut into wedge / chip shape. Spread over a non stick baking tray and spray with Fry Light. Bake on 200 degrees for 25-30 minutes.

Enjoy the pulled pork in a 60g wholemeal roll (Your Healthy Extra B Choice or count 6 Syns).

This was a really delicious and filling meal which was a lovely smell to come home to after a long day out!
